Basting hexagons

When I baste hexagons, I do not sew through the paper as I have seen when looking at the paper-piecing videos and the pictures in the Texas Freckles blog. I want to know why everyone else seems to do it and is there any advantage. I also noticed that nobody seems to trim the squares down to the shape of the paper piece as I do.
